Rub the ribs all over with Rub a Dub, season generously with salt and pepper. Wrap each slab of ribs in heavy duty aluminum foil and bake for 2 1/2 hours. Carefully unwrap ribs and save any juices. Allow ribs to cool. This step can be done up to 3 days prior.
